Homemade Chicken Noodle Soup for Cozy Nights

There's nothing quite like a bowl of homemade chicken noodle soup to warm the soul on a chilly evening. This classic recipe is not only easy to make but also filled with wholesome ingredients that are sure to please the entire family.

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 medium carrots, sliced
  • 2 stalks celery, sliced
  • 8 cups chicken broth
  • 1 1/2 cups cooked chicken, shredded
  • 1 teaspoon dried thyme
  • 1/2 teaspoon pepper
  • 2 cups egg noodles
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic, sauté until the onion is translucent.
  2. Add the carrots and celery, continue to sauté for about 5 minutes.
  3. Pour in the chicken broth, then add the shredded chicken, thyme, and pepper. Bring to a boil.
  4. Once boiling, add the egg noodles and reduce the heat to a simmer. Cook until the noodles are tender.
  5. Garnish with fresh parsley before serving.

This soup is perfect for meal prep and can be stored in the fridge for up to 3 days or frozen for up to 3 months. Serve it alongside some crusty bread for a complete meal that the whole family will love.
