Our first stop was the bustling Mercado 20 de Noviembre. As I wandered through the aisles, the air was filled with the enticing aromas of freshly ground spices and sizzling meats. I couldn't resist trying the famous Tlayudas, which are often referred to as "Oaxacan pizzas." These large, crispy tortillas are topped with a savory mix of beans, cheese, avocado, and your choice of meat.
Day 2: Traditional Cooking Class
On our second day, I took a traditional cooking class that delved deep into the heart of Oaxacan cuisine. We learned to make mole, a complex and rich sauce made with ingredients like chocolate, chiles, and a blend of spices. Each bite was a harmonious blend of sweet, spicy, and earthy flavors.
Day 3: Street Food and Mezcal
No trip to Oaxaca would be complete without sampling its legendary street food.
