Deliciously Simple Puff Pastry Empanadas

Ingredients

  • 1 package of puff pastry sheets, thawed
  • 1 cup cooked shredded chicken
  • 1/2 cup diced bell peppers
  • 1/4 cup chopped onions
  • 1/4 cup shredded cheese
  • Salt and pepper to taste
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat the Oven: Begin by preheating your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Prepare the Filling: In a bowl, combine the shredded chicken, bell peppers, onions, and cheese. Season with salt and pepper.

  4. Egg Wash: Brush the tops of the empanadas with the beaten egg to give them a golden brown finish.
  5. Bake: Transfer the empanadas to the prepared baking sheet and bake for 15-20 minutes or until golden brown.
